gene cafe - revision crash course, please !

Postby fourmations » Wed Dec 16, 2009 1:30 am

hi all

its been a long time

i am firing up the gene after a very long absence
and have forgotten the basics...

i used pre-mix and roast a blend
of 3:2:1 or 2:1:1, with brazil santos, sumatra & sidamo IIRC

i seem to remember 192 degree for 19 mins?
does that sound plausible, i did not roast very dark
as i preferred the flavours of the lighter roast

IIRC i used to dump the cycle on the first sign
of the 2nd crack

this is all fuzzy memories
so any advice welcome

My general profile is to allow the machine to ramp up to 220 - this should take between 7 - 8 minutes. If it gets there sooner than this I hold it at 220 - the first roast is always slower than subsequent roasts. I then ramp it up to around 232 - 240 (depending on the beans) until first crack is heard. If this is very active I may reduce the temp by 4-6 deg. I rarely roast until 2nd is heard, because by that time it is too late. I roast in good ambient light and choose to end the roast on the colour of the beans the smell of the smoke and the chaff separation.

I am finding that starting at 160 and holding it there for a few minutes - until they just start to yellow - then going higher is giving me good results. Not sure where I read it, but it feels right to me.

Not had it long (Thanks again Motoman!) but I am really getting some fine results from it!
