Storing ground coffee

Postby simonp » Thu Nov 11, 2004 4:44 pm

Yes, I know this is wrong, butI have no option for a few days. I need to store some ground coffee for caffetiere brewing. Should I keep it in a one-way valve bag, or a sealed bag? Also coolish, dry place rather than fridge?

I tend to grind a weeks worth for work (every day wouldn't be easy). I store my grounds a glass/rubber seal preserve jar. Easy to use, and get to.
I'd be interested to see if there's a better way, too...

Simon - when I go away, I never, ever take ground coffee. I take some beans and a little Zassenhaus hand grinder I bought for the purpose. If you want to pop up to Swindon and borrow my Zass for a few days, you'll be very welcome.

Failing that - dry and airtight are the key requirements. Fridges are bad because water vapour can condense onto the grounds. Room temp is OK as long as you meet the other two requirements.

Phil, you've seen the size of my car, I'm going to have trouble fitting in the caffetiere let alone a grinder  .
Thanks for the offer anyway Phil :), but we're going to Devon, so kinda heading the opposite way. Are the Zass grinders really small then?

I would definitely put it in the freezer (not the fridge) and maybe in the one-way valve bag make it vacuum. I did it for years and I also have no option when I am at Holiday. Also Simon Levelt one of the big coffee roaster/sellers in the Netherland recommend to put the coffee in the freezer.

BTW keep in mind that you defreeze the coffee (5 minutes at room temperature) before you tamp the coffee.

Wish you a good trip.

Best regards,

Steven

Not huge. A small box with a crank handle on the top.

Not to worry. Have a nice time.

If you go for the Zass "knee mill" (model ZH156) it's only 100mm thick by about 150mm by 180mm (I'm guessing dimensions as mine's at work). It fits in my briefcase OK and would probably fit in your glove compartment!
As I use mine on a worktop not between my knees, I would prefer to have bought the thicker and thus more stable one (model ZH169DG) but still the small size is often useful. It gives a good grind for cafetiere, haven't tried grinding for other brewing methods. I bought mine from Carolyn's site.

Cheers,

Hugh
