When does "brew time" start with a vacuum pot (Bod

I just bought a Bodum Mini Santos E electric vacuum brewer. Doing a search on the web I found some tips on how to adjust the brewing time, for instance by putting a coin under it. I also read somewhere that a brewing time of around 1m20s should me more or less optimal.
But when does the brewing time start ? Is it as soon as the turbulence in the upper bowl starts ?

My parents used to own an electric Cona vac pot and they timed the brew, from the moment the hot water met the grounds.
I seem to remember the total brew time was a bit longer than 1m20s This particular model had no timer, you simply switched it off. It took a while for the vacuum to build up and I would guess total brew time to be 4 mins+
